Barbo’s Spicy African Yam Soup

2 lbs. Yams peeled and cubed
1 onion chopped
2 large garlic cloves, chopped
2 tbs. peanut oil
1 tbs. Madras curry powder
1 tbs. Garam Masala curry powder
4 c. chicken or vegetable broth
2 cans white kidney beans, undrained
˝ tsp salt
˝ tsp. black pepper
˝ 14 oz can cream of coconut
˝ 14 oz. can roasted tomatoes
2 tbs. chunky or cream peanut butter
Sour cream for garnish
Greek Seasoning (optional)

Sauté yam, onion, and garlic in peanut oil for about 6-7 minutes.
Add curry powders and salt and pepper. Stir a few minutes.
Add broth, cream of coconut, tomatoes, beans and cook for about
30 minutes on low, covered. Add peanut butter last.

Serve in bowls topped with sour cream.

This is very good served with cooked brown rice,
and hot buttered corn bread.
