4) 6 ounce each orange roughy fillets (or any firm white fish)
8 green onions trimmed and sliced
1 medium carrot - julliened
4 ounces fresh snow peas, sliced thin like the carrots
Lemon pepper seasoning
Fresh lemon juice
4 lemon slices
4 sheets of aluminum foil
Preheat oven to 450. Place each fish fillet on a piece of foil, sprinkle with lemon juice and lemon pepper seasoning to taste, place one slice of lemon on the fish and top with 1/4 of the veggies.. Tightly close the foil and place each packet on a cookie sheet and bake for 10 - 15 minutes or until fish is flakey.
Tami's Notes: This is an old recipe that my daughter requested the other night. It is so good I don't know why I have not made it for such a long time as we love it.
Cooks Tip: I buy the "carrot chips" that come bagged in teh produce section by the bagged lettuce. (They cut like ruffles potato chips with the ridges). Then I just have to slice them into little match sticks and it only takes a minute to do it. I love easy!
