BARBO'S SPLIT PEA SOUP

1 pound split peas
8 ounces lean ham -- diced
1 cup diced carrot
1 small onion -- diced
2 cloves minced garlic
1 bay leaf -- optional
2 teaspoons Cavender's Greek Seasoning
8 cups boiling water

Place all ingredients in the crockpot in the order given.
I cooked on high for an hour and then turned it to low for
the rest of the day. Stir it up, if it's not thick enough then
add a couple tbs. quick cooking tapioca. The orginator of this
recipe likes to add 1 c. milk to the soup before serving. I did not
do this and the soup is wonderful. It's an option that I thought you
might like.
The entire soup is 16 Ps and you get about 8 c.
2 Ps per cup IF you calculate with 15 grams fiber.
4 Ps per cup IF you calculate with 4 grams fiber
