Indian Style Spice Mix
8 tsps dry mustard 4 tsps ground fenugreek 4 tsps ground cumin 2 tsps ground tumeric 2 tsps ground ginger 2 tsps ground coriander 2 tsps ground cloves 1/2 tsp ground cinnamon
In a small bowl, combine the mutard, fenugreek, cumin, tumeric, ginger, coriander, cloves & cinnamon. Mix well to blend. Stoe in a small, airtight jar in a cool, cark cupboard or the refrigerator.
Makes 1/2 C: Cooks note: Ground fenugreek is available in Indian groceries, some specialty food shope & health food stores
Although you could easily cut the recip in half, this spice mixture is delicious enough & versatile enough--to keep on hand in the kitchen. It is excellent as a rub for broiled or pan-fried meats, fish, and poultry (rub the mixture over the food generously before cooking). Or use it as a flavoring for cooked cauliflower, carrots, onions, & other vegetables. To bring out the flavor, cook it for few seconds in a dry skillet just before using.
