Pizza Beans Kelly Evenson, Pittsboro, NC Serves 6
16 oz can pinto beans, drained 16 oz can kidney beans, drained 2-1/4 oz can ripe olives sliced, drained 28 oz can no-added-salt stewed or whole tomatoes 3/4 lb bulk lean turkey Italian sausage 1 tbsp oil 1 green pepper, chopped 1 medium onion, chopped 1 garlic clove, minced 1 tsp dried oregano 1 tsp dried basil
Combine beans, olives, and tomatoes in slow cooker. Brown sausage in 1/2 tbsp oil in skillet. Drain. Transfer sausage to slow cooker. Saute green pepper in 1/2 tbsp oil for 1 minute, stirring constantly. Add onions and continue stirring until onions start to become translucent. Add garlic and cook 1 more minute. Transfer to slow cooker. Stir in seasonings. Cover. Cook on Low 7-9 hours.
To serve, sprinkle with Parmesan cheese if you wish.

Variation: For a thicker soup, 20 minutes before serving remove 1/4 cup liquid from cooker and add 1 tbsp cornstarch to it. Stir until dissolved. Return to soup. Cook on High for 15 minutes, or until thickened.
