Barbo's Good thick Chili
2 1/2 lbs. of good ground beef. Enough Evoo to saute the veggies and the chili powders 1 large or two medium red onions, large chop 2 red ripe peppers, coarse chop 6 cloves of garlic mashed 2 yellow summer squash, large chop 1 lb. or more of fresh green beans chopped the size of kidney beans Couple handfulls of fresh cilantro 1 can of chicken broth 1 can of organic diced tomatoes with green chilis (no sugar) 1 can of organic diced tomatoes.(no sugar) 1 can organic kidney beans (no sugar) 1 tbs. California red chili powder 1 tbs. New Mexico red chili powder 1 tbs. or more cumin 1 large lemon, squeezed 1 c. black coffee salt and pepper to taste Brown beef, drain and paper towel the fat and place in large soup pot Add the kidney and green beans, tomatoes and chicken broth Saute veggies and remove to soup pot. Put a bit of the oil into the skillet and when hot add the chili powders and cumin and stir on low until they bubble a bit. Throw them into the pot. Add the black coffee and cook uncovered until thick and just the way you like it. Taste and add salt and pepper. You can serve this with a little grated cheese, a dollop of sour cream some cilantro.
