TNT Low Carb Bacon Tomato Pasta/Cauliflower Salad I had thought this one up before for WW but it was high in carbs.

Ingredients
1 medium head fresh cauliflower 3 oz. Dreamfield’s elbow pasta, cooked and drained 8 slices cooked bacon, drained and chopped 4 small tomatoes, peeled, and chopped ¼ c. finely chopped red onion ¼ cup red bell pepper finely chopped 3 large eggs, hard boiled, sliced for top 1/2 cup reduced-calorie mayonnaise 1/2 cup fat-free or reduced fat sour cream 1/4 cup dill relish 4 tsp. apple cider vinegar 2 packets Splenda 1/2 tsp. kosher salt (or to taste) 1/2 tsp. black pepper
Instructions:
Hard boil the eggs. Steam med. head cauliflower for 10 minutes or until tender/crisp. Cut cauliflower into a serving bowl with pieces the size of the macaroni. Add macaroni, crumble bacon and add the veggies. Make the dressing and pour over all. Toss well, taste, and add more s. and p. if needed. Place the egg slices on top. Serve chilled.
