Low Carb Cheese Crackers
Delicious snack, quick and easy to make.
Ingredients: 1/2 c. sifted coconut flour 1/2 c. almond flour blanched or not 2 eggs 1/4 c. melted butter 1/4 tsp. salt *3 c. sharp cheddar, grated
Method: Blend together butter and eggs. Add almond flour, salt and cheese. Add coconut flour and knead the dough in your hands for 2-3 minutes. Form dough into 20-24 balls. On a greased cookie sheet (I always foil my pans) place balls and flatten them to about 2 inches diameter. Bake in pre-heated 400 degree oven for 15-20 minutes. Place on cooling rack. Left over crackers can be reheated at 400 degrees for about 4 minutes.
You can use any nutmeal that you desire. * I didn't have quite that much cheese, about a little over 2 c. and they turned out just fine. ;D Barbo
