Makes 18 muffins 2 points for the whole 18. recipe says 18 but I made a good sized 14 out of it.
150g Elf soft cheese. (Extra low fat) 4 TBS sweetner 3 medium eggs separated 2 very soft bananas. peeled and mashed 200g semolina 1/2 tsp baking bowder 1 tsp vanilla essence or extract 4 heaped Tbs cocoa drop of skimmed milk muffin cases
1, preheat oven to Gas 4. 180deg c. 350f
2, cream together the low fat soft cheese and sweetner then whisk in the egg yolks and mashed banana. mix the cocoa powder to a smooth paste with a drop of skimmed milk add this and the vanilla to the mixture.
3. Fold in the semolina and baking powder. Whisk the egg whites in a large bowl until stiff fold them into the semolina mixture.
Put mixture in cases and bake for 15 - 20 mins.
I found this to be quite a firm texture not spongey. they freeze well. some of the girls on my w/w site have added blueberries to the mixture and have found them very good.
