I made these to keep in the freezer for the kids so they can grab one, warm it in the microwave and eat it on the run or take it with them to work. They loved them. They are moist and full of flavor and fiber. DS who is not a big muffin eater gave them a thumbs up! I used egg substitute and raisins.
Cinnamon Bran Muffins
Serves: 12 Points: 2 Source: WW recipe board
2 cups Kelloggs All Bran Extra Fiber Cereal 1 1/2 cups skim milk 1 1/4 cup flour 1/4 cup sugar 4 tsp. baking powder 1 1/2 tsp cinnamon 1/3 cup apple butter 1/4 cup egg substitute or 2 egg whites 1/4 cup raisins or 1/3 cup craisins
Combine the cereal and milk. Set aside for 15 minutes to soak.
Combine the flour, sugar, b. powder, raisens and cinnamon in a large bowl. Mix well.
Mix apple butter and egg sub. in a measuring cup and then add to soaking cereal. Stir.
Add cereal mixture to the flour mixture and stir just until dry ingredients are moistened.
Preheat oven to 350 degrees. Coat 12 muffin cups with baking spray.
Bake 17 min. or until a toothpick comes out clean. Cool 5 minutes before removing from pan.
