Italian Bean Burgers

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 30 ounces canned cannelini beans -- rinsed 1 whole egg 1/4 cup seasoned bread crumbs 1 1/2 teaspoons italian seasoning
Mash two rinsed and drained 15-ounce cans cannellini beans; add one egg, one-quarter cup seasoned dried bread crumbs and 1-1/2 teaspoons Italian seasoning. Mix well. Form into four 1/2-inch thick patties. Cook in a little olive oil in a non-stick skillet three minutes per side or until hot and crusty. Serving Ideas : Place on toasted sandwich buns. Top with heated (store-bought) marinara sauce and grated Parmesan cheese. Serve with baked potato chips. (add appropriate pts)

Now that sounds delicious! When we were kids Mom used to cook a big pot of white beans....we would mash some, put it on hot buttered toast, topped with sweet chili sauce & enjoy!!!
