MACARONI AND CHEESE ALMOST Serves 2
2 c. cooked small shells 1" of Velveeta lite cheese 1/2 C Monterrey Jack shredded combo cheese (I think I used Monterrey Jack & cheddar or mozzarella) 1 bag cauliflower, steamed or however you want to cook it. CHOP IT SMALLISH Pam spray a 9x9” casserole dish Combine the cooked shells, & CAULIFLOWER. Layer them with the cheeses. Then nuke them for a bit to melt cheese. Stir it all up & EAT. I have a bunch in refrig for lunch tomorrow.
Or modify as you like it.
