LASAGNA QUO VADIS

Meat Ragout: 1 tablespoon light butter 1 small finely chopped onion 1/2 cup finely chopped celery 1 large chopped carrots 3/4 pound extra lean ground beef 1/4 cup dry white wine 1/4 cup tomato sauce -- or ketchup
Béchamel Sauce 1/2-cup light butter 1/2-cup all-purpose flour 1 quart 1% milk salt & pepper to taste 1-pound Spinach lasagna noodles -- cooked 1/2-cup Light Parmesan cheese sweet paprika for garnish
Sauté onion, celery, and carrot in butter for about 10 minutes or until clear. Add meats, wine and tomato sauce and simmer for 10 minutes.
Béchamel Sauce Melt butter in saucepan, add flour stirring constantly. Add milk gradually; continue to stir constantly until sauce is smooth. Add salt and pepper. Cook about 8 minutes. Set aside Cook a box of *green spinach lasagna noodles until al dente.. Using a 9x13" pan, layer alternately; béchamel, noodles, meat sauce, béchamel sauce, sprinkle with Parmesan cheese and repeat until finished ending with béchamel sauce and Parmesan. Sprinkle lightly with paprika and bake 350 for 35 to 40 minutes or until bubbly. Let stand for at least 10 minutes before cutting. serves 12 @ 7 Points each
