Splenda Chocolate Chip Cookies

These were pretty good for using so little sugar sub, and according to MasterCook only about 75 cals each. I usually use less chocolate chips than called for. To make less go further, I use mini-chips or sometimes chop up my full-size chips.

Splenda Chocolate Chip Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter
1/4 cup Splenda Sugar Blend
1/4 cup Splenda Brown Sugar Blend
1 teaspoon vanilla
2 large eggs
12 ounces semisweet chocolate chips
Preheat oven to 375. Sift together flour, soda and salt into a bowl and set aside. Beat the butter, both Splendas and vanilla in a large bowl with an electric mixer for about 2 minutes. Beat in eggs one at a time, then gradually add flour mixture. Stir in chocolate morsels. Drop rounded tablespoons of dough one-inch apart onto ungreased baking sheets.
Bake until cookies are lightly browned, about 10 minutes. Cool completely. Makes 60 cookies using the One Tablespoon cookie scoop.
