Cranberry & Oatmeal muffins
1/2 c. oats 200ml Natural lf yogurt 1 c. whole meal flour 1/2 c. all-purpose flour 2 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. ground cinnamon 2 egg 1/3 c splenda 1/2 c. brown sugar 1 c. dried cranberries 120ml vegetable oil
In a small bowl mix together oats and yogurt, let stand 5-10 minutes. In another bowl, mix flour, baking soda, baking powder and cinnamon. In a larger bowl combine eggs, brown sugar splenda and oil. Stir in oats mixture, then flour. Gently fold in fruit. Bake at 370 degrees 200c for 20-25 minutes.
makes a dozen good size muffins.
