B’s Tamales Makes one dozen
Meat: 1 lb. Carnitas from Trader Joe’s, shredded 1 can Patos enchilada sauce Sugar Salt Garlic powder, or fresh chopped. Mix together and heat up. Drain.
1 can black olives, cut into halves
Tamale Dough: 2 c. Maseca (Mexican tamale flour) 2 c. warm chicken broth 2/3 c. lard melted in broth 1 scant tsp. salt Mix until spongy (or spreadable)
Cornhusks: Pour boiling water over all and let set about and hour. Dry off.
Spread 5 tbs. dough onto center of corn husk, drop a couple tablespoons of meat in center along with 2-3 olives. Fold 1 edge of the husk to the center, and then fold the other side to cover entire tamale. Fold ends over by two inches, or tie ends.
Steam for 45 minutes.
