Kefir Biscuits by Barbo 400 degrees
2 tbs. oil in large pie tin in oven to heat
2 c. bread flour 2 rounded tsp. baking powder 1/4 tsp. baking soda 1 tsp. salt Put dry in food processor and whirl, add 1/3 c. cold unsalted butter in pieces and pulse a few times Add scant cup of kefir and pulse until dough comes together
Knead on floured board about 8-10 times Cut out and place in hot fat dipping each side. Bake 12 minutes at 400, turn up heat to 450 and bake another 8 minutes until golden brown.
Use kefir in place of buttermilk. These are light, airy and high. Delicious biscuits.
