Sour Dough Starter and Pancake Recipe
Starter 3 c. warm water 1 1/2 tbs. active yeast 2 tsp. sugar 3 c. all purpose flour
Combine first 3 ingredients, cover and let sit until foamy. Add the flour and beat vigorously. Place in a glass 4 qt. bowl, cover with a towel and place in warm spot. Such as your oven near the light which will keep it warm. Leave for 12 hours. It will be full of life and smell wonderful.
Pancakes 1 1/2 c. flour 3 tbs. sugar 1/2 tsp. salt 1 1/2 tsp. baking soda 2 large eggs, beaten light 1/4 c. melted butter or oil 1 c. starter 2/3 c. water (next time I'm trying milk) 1 tsp. vanilla (optional) Beat well and start making pancakes. If batter is too stiff, add liquid. I freeze my cakes with a slip of wax paper between each one and then wrapped well in freezer foil. Enjoy! We do.
REPLACE STARTER: For every cup of starter used, add 1 c. of flour and 1 c. warm water and whisk it in well. Place in fridge with light cover. Make certain you have the starter in large non-reactive bowl, ie, Pyrex with plenty room for expansion. You can keep this going for years.
