Cauli-Rice TNT
Made a chicken curry and since we don't eat rice, I made the cauli-rice by placing cut up fresh cauliflower into the VitaMix, added water to cover and gave it three pulses. After draining & drying with paper towels the 'rice' was ready. I placed 1/3 c. coconut milk and 1/3 c. chicken broth in a skillet and reduced it down for about 6 minutes, or until it was not so liquidly. Then added the cauli-rice and tossed it in the liquid, salt and pepper and then clamped a lid down for about 3 minutes. Off lid, mix well. Serve as a side dish with the curry. We think it's delicious. It was still great next day.
Caution: Don't over cook and make it mushy...it needs a bit of bite.
