Citrus Salmon Parcels
From: www.cookingvillage.com
For a delicious dinner that is low in fat, easy to make and quick
to clean up, cook salmon fillets in foil parcels with an orange-lemon sauce and plenty of healthy veggies.
Prep Time: 20 minutes
Baking Time: 10 minutes
Makes 4 servings
4 salmon fillets (6 oz each)
1 Tbsp butter or margarine, melted
1 1/2 Tbsp orange-juice concentrate
2 tsp fresh lemon juice
1/2 tsp salt
1/8 tsp black pepper
1 small onion, thinly sliced
2 carrots, thinly sliced
4 oz snow peas, strings removed and cut in half crosswise at an angle
1. Preheat the oven to 400 degrees F. Place one salmon fillet on each of four 12x16-inch sheets of aluminum foil.
2. In a small bowl, whisk together the butter, orange-juice
concentrate, lemon juice, salt and pepper; spoon over the fillets.
Arrange the onion, carrots and snow peas on top of the fillets.
3. Fold foil over each portion of fish so the edges meet. Starting at one end, fold and crimp to seal the edges, making a parcel.
4. Place the parcels on a baking sheet; bake 10 minutes. Open
carefully to release the steam. With a spatula, transfer the salmon and vegetables to plates. Drizzle with the sauce.
Per serving:

Village Tip
You can make this recipe with a flaky white fish, such as lemon sole or flounder. And once you're comfortable with the technique, try cooking thin chicken or pork cutlets in parcels with other vegetables and flavorings.
