Shrimp Brandy Bisque
2 tsp olive oil 1 leek ( white part only ), finely chopped 1 tsp dried thyme 2 cups lowfat ( 1 % ) milk 2 bay leaves 12 oz. small cooked shrimp, peeled & deveined 3/4 cup reduced-sodium chicken broth 2 Tbsp cornstarch Salt and ground black pepper 2 Tbsp brandy 1 Tbsp chopped fresh chives
Prep Time - 10 minutes Cook Time - 10 minutes Serves 4 persons 4 pts per serving
1. Heat oil in a large saucepan over medium heat.
2. Add leek and cook 3 minutes, until soft.
3. Add thyme and stir to coat.
4. Add milk and bay leaf and bring to a boil.
5. Add shrimp and simmer 5 minutes.
6. Dissolove cornstarch in chicken broth and stir into shrimp mixture.
7. Simmer 2 minutes, until mixture thickens. Stir in brandy.
8. Remove from heat, remove bay leaves, season to taste with salt and black pepper. Ladle into bowls, top with chives.
