Seared Salmon Fillets on Asparagus Salad
1 bundle asparagus spears ( approx. 6 oz ) 5 sprayrs Becel Topping & Cooking spray 1/4 cup watercress 1/4 cup spinach 1/4 cup arugla 5 1/2 oz fresh salmon 1/8 tsp pepper 1 Tbsp balsamic vinegar 1 Tbsp lime, or lemon juice
Prep Time: 10 minutes Cooking Time: 15 minutes Level of Difficulty: Easy Servings: 2 2 pts per serving
1. Preheat a grill or chargrill pan. Spray the asparagus with Becel Topping & Cooking Spray, then chargrill or grill the spears for 5-6 minutes, until cooked. Cool for a few minutes.
2. Meanwhile, spray the salmon fillets with Becel Topping & Cooking Spray and grill or chargrill for 6-8 minutes, turning once. Season with freshly ground black pepper.
3. Arrange the salad leaves on two serving plates and portion the asparagus spears between them. Sit the salmon fillets on top, then serve at once, drizzled with the balsamic vinegar and lime or lemon juice.
4. Sprinkle a few crushed coriander or cumin seeds over the salmon before cooking for a delicious flavour.
