*Today's Recipe It's CORE without the croutons! Summer Gazpacho (4 servings at 95 Calories)
1 red or green bell pepper, halved and seeded 1 cucumber, peeled and halved 3 cups reduced sodium tomato juice 1 onion, halved 2 garlic cloves 1/4 cup red wine vinegar 1/4 cup 0-cal Italian salad dressing (I would use evoo) barbo 2 tomatoes, chopped 4 scallions, thinly sliced 1/2 cup packaged seasoned croutons. (optional)
1. Coarsely chop half of the bell pepper and cucumber. Finely chop the other half of the bell pepper and set aside the finely chopped part.
2. In a blender combine 2 cups of tomato juice and all vegetables (but scallions) and puree. 3. Pour all into a plastic or glass bowl. Stir in remaining tomato juice, vinegar and salad dressing. Refrigerate to blend flavors and chill -- at least 2 hours.
4. Add finely chopped bell pepper and cucumber. Garnish with scallions and croutons. (optional)
