TNT Barbo's Pasta Beef Soup
1 lb. ground sirloin steak 1 lean steak grilled, med. rare or done on the barbie, cut up 2 tbs. extra virgin olive oil 1 lg. onion chopped 4 cloves garlic, chopped 1/2 c. celery diced 1 c. shredded carrots 1 can Trader Joe's Pinto beans, including juice 1 can diced tomato,including juice 2 cans beef broth 1 can chicken broth 1 carton Trader Joe's Roasted Red Pepper & Tomato Soup (save this for last 15 minutes) 5 oz. large macaroni SHELLS 1 tsp. Kosher salt 3/4 tsp. coarse ground black (Tellicherry) pepper Saute veggies in olive oil, remove, add sirloin and steak and brown. Place veggies, beans, broth, tomatoes and all seasonings into soup pot and cook for about 45 minutes. Add Roasted Red Pepper soup and shells and cook an additional 15 minutes.
This soup is best made 24 hours ahead, but it's a super fine tasting soup right away as well.
This got 10 stars from friends and family. *The cans are the 15 oz. size.
