TNT Barbo’s Favorite Bean Soup 1 pkg. Hurst’s HamBeens Brand 15 bean soup 1 lb. Lean ham cubes 1 large onion, med chop 4 large garlic cloves chopped 1 15 oz. can of stewed tomatoes 2 tbs vegetable oil of choice Kosher salt to taste Fresh ground pepper to taste 2 quarts of water
Soak beans overnight in 2 quarts of water or 8 hours. Drain beans & add 2 Qts. of water and the ham. Cover and simmer for about one hour and 30 minutes. Uncover and add stewed tomatoes, sauté the onion and garlic in the oil, Add to soup with salt and pepper and let cook for another 20 minutes.
Makes approx. 3-4 quarts of wonderful thick soup.
