Shaz's Skinny Crockpot Soup
Crockpot Soup to Get Thin On Sat 6 Jan 2007 12:34 pm
Makes 20-plus servings. Should be made in a 7 quart crockpot or halved and made in a 4 quart.
3-48 ounce cans of low-fat, low-sodium chicken broth
2 medium-sized onions, chopped
5 celery ribs, chopped
5 parsnips, chopped
1 head of cabbage, shredded (about 8 cups)
4 bell peppers, any color, chopped
8 ounces of mushrooms, sliced
10 ounce package of frozen chopped spinach
10 ounce package of frozen broccoli florets
10 ounce package of frozen cauliflower
2 or 3 pieces of chopped ginger (I used about a 2" piece, chopped)
14-1/2 ounce can of crushed tomatoes
salt and pepper to taste (I added some of that Magic Dust)
Combine all ingredients in a slow cooker.
Cover and cook on low 6-8 hours.
Per serving:
90 calories, zero from fat
zero cholesterol
660 mg sodium
16g carbohydrate (15 from fiber!)
7g of protein
20% of daily need for vitamin A
40% of daily need vitamin C
8% daily calcium
15% daily iron
My notes: DELISH and very satisfying. I don't know how much broth I used. I have a 6 quart crockpot and it was within an inch or two of full of homemade broth.
I left out the parsnips, cos DH did the shopping for me and I knew he'd never find them. He also skipped buying me the bell peppers as he doesn't like them but LOVES vegetable soup. I used two cans of tomatoes and probably about 12 ounces of mushrooms and just one onion.
The pot was long-past overflowing so I had to move it to my 20 quart stock pot and cook it there.
This is my lunch and sometimes dinner to get me past that holiday bloat.
