Prairie-Style Scalloped Potatoes
Cooking spray 1 cup low-fat ( 1% ) milk 1 cup ( about 4 oz ) shredded cheddar cheese 3 Tbsp low-fat sour cream 2 tsp Dijon mustard 1/4 tsp ground black pepper 2 large Idaho potatoes ( 1 lb ), peeled and sliced crosswise into 1/4- inch thick slices 1 cup thinly sliced onion
Prep Time - 15 minutes Cook Time - 1 hour, 15 minutes Serves 8 persons 3 pts per serving
1. Preheat oven to 375 F. Coat a shallow baking dish with cooking spray.
2. In a medium bowl, whisk together milk, 3/4 cup of the cheese, sour cream, Dijon mustard and pepper. Set aside.
3. Arrange half of the potato and onion slices in the bottom of prepared baking dish.
4. Pour over half of the milk mixture. Top with remaining potatoes and onions, and pour over remaining milk mixture.
5. Top with remaining 1/4 cup of cheese.
6. Cover with foil and bake 45 minutes.
7. Uncover and bake 30 more minutes, until potatoes are tender and cheese is golden and bubbly.
Helpful Tip: Make this dish a complete meal casserole, by adding in cubes of chicken and one 10 oz package of frozen chopped broccoli, partially thawed.
