Rutabaga & Fried Onion Hash
1 large rutabaga, peeled and diced 2 tsp olive oil 1/2 cup diced yellow onion 1/2 cup reduced-sodium chicken broth or vegetable broth or water 1 Tbsp red wine vinegar 1 Tbsp ketchup 1/2 tsp paprika Salt and ground black pepper
Prep Time: 15 minutes Cook Time: 15-17 minutes Serves 4 persons 2 pts Flex / Core
1. Place rutabaga in a medium saucepan and pour over enough water to cover.
2. Set pan over high heat and bring to a boil. Boil 5 minutes. Drain and set aside.
3. Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and cook 5 minutes, until golden brown.
4. Add reserved rutabaga, broth, vinegar, ketchup and paprika and bring to a simmer.
5. Simmer 5 to 7 minutes, until liquid thickens and reduces and rutabaga is tender. Season with salt and black pepper.
