Roasted Herb Potato Wedges - 2 pts
2 Tbsp Dijon mustard 1 tsp olive oil 1 Tbsp rosemary, freshly chopped 1 Tbsp parsley, freshly chopped 1/2 tsp table salt 1 pound uncooked new potatoes, ( white or red ) skinned, cleaned and cut in half 1/4 tsp black pepper 1 Tbsp black pepper 1 Tbsp fresh oregano, chopped 5 sprays Becel Topping & Cooking Spray
Prep Time: 12 mins Cooking Timg: 30 mins Level of Difficulty: Easy Servings : 4 2 pts per serving / Core
1. Preheat oven to 425 F.
2. Combine all ingredients, except potatoes, in a small bowl.
3. Place potatoes in a large sealable plastic bag. Add mustard mixture. Close bag and shake to coat.
4. Pour contents of bag into a shallow baking pan coated with Becel Topping & Cooking Spray.
5. Bake, turning occasionally, until potatoes are tender, about 25-30 minutes. Yields about 1/2 cup potatoes per serving.
For more buttery flavour, mist potatoes with Becel Topping & Cooking Spray before serving.
