Cheesey Squash Casserole Servings: 8 / Units per serving=2 Pts Source : WW Simple Goodness Magazine

Ingredients
2 lbs yellow squash, sliced 3/4 C chopped onion 1 T- RC margarine, stick 2 T flour 1 C -1% milk 3 oz shredded RF cheddar cheese 1/2 tsp salt 1/4 tsp pepper cooking spray 1/2 C bread crumbs
Preheat oven to 350º.
Steam squash and onion, 12 minutes or until tender. Drain; set aside, Melt margarine in a saucepan over medium heat. Add flour; cook 1 minute, stirring constantly. Gradually add milk; cook until thick and bubbly, stirring constantly. Remove from heat; add cheese, salt, and pepper, stir until cheese melts, add squash-onion mixture. Spoon into a shallow 1-1/2-quart casserole coated with cooking spray; sprinkle with breadcrumbs.
Bake at 350º for 20 minutes or until thoroughly heated.
