Preheat oven to 350 degrees 3 medium potatoes -- thin sliced 2 medium carrots -- grated 2 whole green onions -- chopped (include green tops) 8 ounces fat free and low sodium chicken broth 1 tablespoon chopped parsley
Arrange 2 layers of potatoes in a nonstick sprayed 9 inch pie plate or quiche pan. Spread carrots and onions over potatoes.
Layer remaining potatoes over top. Pour broth over the top. Cover and bake 40 minutes. Uncover and sprinkle parsley over the top. Bake uncovered 10 to 15 minutes. Let stand 10 minutes then cut into wedges.
For 6 servings 1 point per serving.
