Crockpot Steel Cut Oats
8 cups water 2 cups steel cut oats 1/4 tsp. salt 1/3 cup dried peaches
Combine all in a crockpot. Turn heat to low. Put on lid and cook for 8 hours.
Notes from Sue: I add dried fruit of my choice, some vanilla, cinnamon and a bit of nutmeg. For me a bit more salt as well, but that of course is personal choice. Also I start it on high to get it going, then turn to low after 1/2 hour or so.
This recipe is very forgiving and can be easily altered to your taste. It reheats well in the microwave.
