Summer Squash Packets
Ingredients: 2 cups zucchini or "yellow crookneck" squash, sliced thinly on the diagonal 1/4 of a small onion, in long strips 1 teaspoon oil 4 tablespoons mayonnaise 2 teaspoon granular Splenda 1 teaspoon lemon juice 1/2 teaspoon paprika 1/4 teaspoon each, salt and pepper 1/4 cup grated Parmesan cheese
Directions: Form six heavy-duty foil cooking packets by removing 24-inch lengths of foil and doubling them over themselves. Use the oil to lightly grease the center of each packet. Layer the prepared vegetables in the oiled region. Blend the mayonnaise, Splenda, spices and lemon juice. Drizzle evenly over the vegetables. Sprinkle chopped herbs and Parmesan cheese over all. Close foil packets tightly by rolling each seam several times but do not close too tightly (leave some room in each packet for expansion caused by steam).
Cook packets over indirect heat (grill or campfire) for about 20 minutes, or until vegetables reach desired doneness. (Packets may be prepared ahead of time, and can really ease the task preparing a tasty meal while camping!) Makes six servings.
