Apple Puffed Pancake
Nutrition: 1 bread, 1 fat, 1/4 milk, 1 protein, 1 fruit. Very filling and good tasting. YUM!
2 servings: Heat oven to 425 degrees Butter Pam spray 9x9 inch non-stick pan
Slice two apples and place in sprayed pan Cover with 1/3 c. Splenda, cinnamon and place in oven for 10 minutes.
In blender place: 2 eggs 2 tsp. melted butter 1/2 c. milk 1/3 c. flour 1/3 to 1/2 c. Splenda 1/2 tsp. cinnamon 1 tsp. vanilla pinch of baking powder 1/4 tsp. salt
Whirl until smooth and pour over hot and bubbling apples. Bake for 18- 20 minutes. It is puffy and delicious. Enjoy with or without anything on top. Sugar free maple syrup is good but I like it plain.
