This is one of my family's favorite recipes.
Barbo’s Chicken Country Captain 12 or 6 servings 12 boneless chicken thighs 4 tri-color peppers, large dice 2 onions, large dice 5 garlic cloves, crushed EVOO & veggie oil ½ c. flour 2 tsp. seasoning salt 1 tsp. coarse grind black pepper 1 tbs. garam masala curry powder 1 tbs. madras curry powder ½ c. golden raisins 1/3 c. chunky peanut butter 1 15 oz. can diced tomatoes 1 15 oz. can tomato sauce
Put flour and seasoning salt into paper bag and shake with chicken in it to coat thoroughly. Saute veggies in EVOO and remove from skillet Add veggie oil of choice and brown chicken on both sides. Remove chicken. Add curry powder to oil in skillet and let cook a minute or so. Add the tomatoes and sauce, peanut butter and raisins, & black pepper. Now add back chicken and veggies. Mix well, cover and let simmer for 55 minutes. Good served with sticky rice, place chopped peanuts in dish, chopped egg, and marinated cucumbers, coconut as sprinkles.
