"Oven Fried" Chicken
1/2 cup 1% light buttermilk 2 drops Tabasco sauce or more if you like it spicy
4 {4 oz. each} boned & skinless chicken breasts 1/2 cup finely crushed cornflakes crumbs 3 tbsp. all purpose flour{or whole wheat} 1/4 tsp. salt 1/8 tsp. black pepper 4 tsp. olive oil
Spray or line a baking sheet with parchment paper. In a large shallow dish, combine the buttermilk & tabasco; add the chicken breasts. Cover & marinate in the fridge for 1-2 hours.
Preheat oven to 400°
In a flat bowl or plate, combine the crumbs, flour & seasoning. Remove the chicken from the buttermilk & coat each piece with the crumb mixture, making sure it's well coated. Place on the baking sheet & drizzle 1 tsp. of the oil on each piece. Bake for 30 minutes , turn chicken over & bake for another 10-15 minutes.
