CAROL'S "OVEN FRIED" POTATO CHICKEN
1 1/2 lbs chicken thighs without skin -- boneless, about 8 1/8 cup all-purpose flour 1/2 tsp poultry seasoning 1/2 tsp salt 1/4 tsp pepper 1 lg egg -- beaten 2 tbsps skim milk 1 cup potato flakes 1 tbsp canola oil
Mix the flour & seasonings in a small flat dish, set aside. Beat the egg with the milk in a cereal sized bowl, set aside. Put the potato flakes in a seperate flat dish. Wash the chicken; dip each piece into the flour mixture, then into the beaten egg & finally into the potato flakes being sure to coat thoroughly. Preheat oven to 350° Pam spray a baking sheet or line with parchment. Or use a baking stone. Place the chicken pieces on the sheet so the meat is not touching. Drizzle 1/2 tsp. oil over each piece of chicken. Bake for 45 minutes or until golden brown & cooked though. Serves 4{2 thighs each}-@ 5 Points each serving
Serve with a small baked potato and a 0 Pt veggie.
