BLT Pasta Salad
3 2/3 cups of elbow macaroni (8 oz uncooked) -cooked without salt or fat 4 cups tomatoes - seeded and coarsly chopped- I used roma (about 2 and 1/2 pounds) 4 slices of cooked crispy bacon, crumbled 3 cups of iceburg lettuce, sliced thin 1/2 cup of fat-free mayonaise 1/3 cup of low-fat sour cream 1 tbsp. Dijon mustard 1 tsp. sugar 2 tsp. cider vinagar 1/2 tsp. salt 1/2 tsp. pepper
Combine first 4 ingrediants in a large bowl. Toss gently. Combine mayonaise and next 6 ingrediants. Stir well. Add dressing to salad and toss gently. Serve immediately.
Yield:10 cups (10 servings of 1 cup)
