Ingredients
1 head cauliflower 4 slices cooked bacon 1 medium onion, finely chopped 1/2 cup dill pickle finely chopped 3 large eggs, hard boiled 1/2 cup reduced-calorie mayonnaise 1/4 cup fat-free sour cream 2 Tbsp apple cider vinegar 2 Tbsp Dijon mustard 1 packet Splenda 1/2 to 1 tsp kosher salt (or to taste) 1/2 tsp black pepper 1 cup cherry tomato(es)
Instructions
Hard boil the eggs. Micro steam large head of cauliflower for 10 minutes. Plunge into cold water. Pat dry and have large pieces of cauliflower into a serving bowl. Crumble bacon and add the veggies and the eggs. Make the dressing and pour over all. Serve warm or cold
