Apple & Carrot Salad
1/4 cup fat-free mayonnaise 1 tablespoon cider vinegar 1/2 teaspoon sucralose non-caloric sweetener 2 Granny Smith apples, cored and diced 2 cups matchstick-cut carrots * 1 celery rib, finely chopped
Preparation:
1. In a large bowl, combine mayonnaise, vinegar & sweetener.
2. Add apples, carrots and celery; toss well to coat. Cover & refrigerate until chilled.
Per serving: 72 calories; 0 g fat; 3.5 g fiber
Makes 4 servings
* For an extra-easy preparation, matchstick-cut carrots are available pre-cut and pre-packaged in the produce section of the supermarket.
