Broccoli & Cauliflower Salad
1 head broccoli 1 small head cauliflower several cherry or grape tomatoes 1 small purple or Vidalia onion thinly sliced 1 carrot shredded or thinly sliced
1 TBLSP packaged Real Bacon bacon bits 1 pt 2 TBLSP shredded mild cheese - used Low Fat 1 pt ... (Fat Free would be even more diet friendly) 1 packet Lite Ranch dressing from Wendy's 2.5 pts 1 TBLSP Low Fat Mayo 1 pt
Cut and break apart just the heads of the broccoli & cauliflower. (Finely dice stems or save for another use). Cut cherry tomatoes in fourths or cut grape tomatoes in half. Mix all veggies, cheese and bacon bits in a bowl. Add dressing and toss till coated. Adjust the amount of dressing to your own taste.
This adds up to about 5.5 pts ... but it makes a huge tupperware bowl full ... about 8 cups. You could use Fat Free mayo, cheese, and salad dressing to lower the points even more ... and leave out the bacon bits if you wish. But to me this is well worth a point or less per serving!
