Chicken Salsa Salad
Serves: 4 Prep Time: 10 min Cook Time: 10 min to 12 min 5 tsp (25mL) Mrs. Dash® Chicken Grilling Blend™, divided 4 boneless skinless chicken breast halves (about 1 lb) (454g) 1/4 cup (60mL) chunky salsa 1/4 cup (60mL) light mayonnaise 1 cup (240mL) frozen whole kernel corn 1 cup (240mL) chopped green bell pepper 10 Oz. (280g) package of salad greens
1. Preheat broiler or grill. 2. Coat each chicken breast half with 1 tsp (5mL) Mrs. Dash® Chicken Grilling Blend™. 3. Cook 5 to 6 minutes. 4. Turn and cook another 5 or 6 minutes until chicken juices run clear. Remove and let cool. 5. Combine salsa, mayonnaise and remaining Mrs. Dash Chicken® Grilling Blend™. 6. Cut cooked chicken into bite-sized pieces. 7. Cook corn, drain and combine with bell pepper. 8. Divide salad greens equally between four plates, top with chicken mixture. 9. Spoon salsa mixture over each salad and serve.
