Barbo’s TNT Strata (Savory Bread Pudding)
9x13 casserole butter sprayed
Preheat oven to 325 degrees
The Bread:
9 oz. of dried or toasted sour dough, cubed
Spray bread with butter spray
The Custard:
3 cups milk, heated
6 eggs, beaten
1 tbs. Dijon mustard (optional)
The Filling:
*2 c. stir fried veggies (recipe included)
12 oz. shredded cheese (your choice)
The Method:
Beat eggs in a large bowl add mustard if using.
Slowly add the heated milk to the eggs, beating constantly until all is incorporated.
Pam spray your casserole dish. Lay ½ of the bread cubes on the bottom give them a spray.
Add ½ of your filling and ½ of the cheese, repeat ending with cheese.LET STAND FOR 30 MINUTES. Bake for about 45 minutes or until strata is firm.
*You can use any filling you wish, it could be sausage and mushrooms, or bacon, poultry, beef or anything you can think of that you like combined. I made it vegan this time.
Herbs and spices of choice can be used.

2 tbs. extra virgin olive oil
1 large onion, sliced medium
2 cloves crushed or chopped garlic
2 red peppers, sliced medium
2 orange peppers, sliced medium
2 yellow peppers, sliced medium
1 or 2 zucchini or yellow squash, strips
1 or 2 tomatoes, quartered.
Kosher or sea salt
Fresh ground black pepper
Dry basil to taste
Large skillet and 1 tbs. oil heated. Add onions and stir-fry tossing in the oil until clear, add garlic and continue frying until the garlic is ready. Place this into a bowl. Add the other tbs. of oil and
Add the peppers and squash and stir fry tossing until they are cooked but still retain some crispness. Add salt, pepper, basil and tomatoes and cook for about 1-2 minutes more.
This is a great side dish for meats, poultry, or as a filling for strata, & tacos.
Strata can be made a day ahead of time. Let it stand awhile
for room temp before baking or figure it will need an extra
15 minutes if taking it directly from fridge.
