Sweet Potato Orange Cups
1 orange, halved 1 cup well cooked sweet potato (or canned) Dash of cinnamon and nutmeg 10 mini marshmallows
Preheat oven to 350. Carefully scoop pulp from orange halves. Save orange shells. Chop pulp. Combine with sweet potoato and spices. Divide sweet potato/orange mixture into the two orange shells. Carefully round on top and place in custard dishes or muffin tins. Bake for 20-30 minutes, or until heated. Add marshmallows for last 5 minutes of baking. (Do this in the microwave too! Place orange cups in small custard dishes. Bake for 2-3 minutes. Add marshmallows and cooks for another minute.
