Quiche for One
1/3 cup fresh mushrooms 1 tsp. butter 1/4 cup egg substitute{or large egg} 3 tbsp. skim milk 1/8 tsp. pepper Dash ground nutmeg 1/4 cup shredded reduced fat Swiss cheese 1 tsp. real bacon bits 1 tsp. minced chives
In a small skillet, saute the mushrooms in butter until softened. In a small mixing bowl, beat egg substitute, milk, pepper & nutmeg. Stir in the mushrooms, cheese, bacon bits & chives. Pour into a 5" pie plate that has been coated with non stick cooking spray. Bake at 350° for 30 minutes or until set. Let stand for 5 minutes before serving.
Yield: 1 serving: 154 calories, 6 grams fat, 6 carbs, trace fiber, 19 grams protein.
