Beef Steak and Vegetables for Two
A dash of Italian seasoning and a sprinkling of Parmesan give this simple dish a wonderful Mediterranean flair.
Time Preparation: 15 min, Cook: 15 min
Ingredients 2 boneless beef top loin steaks, cut 1-inch thick (about 1 1/4 lb.) 2 teaspoons olive oil 1/2 teaspoon Italian seasoning 1 medium yellow squash, sliced diagonally (3/4-in.) 1 medium zucchini, sliced diagonally (3/4-in.) 2 tablespoons Parmesan cheese, grated
Cooking Instructions 1. Preheat grill to medium. Wash hands. Combine oil and Italian seasoning; brush on vegetables. Sprinkle with cheese.
2. Grill steaks and vegetables, uncovered and turning occasionally, 15 to 18 minutes or until steaks are medium rare to medium doneness (internal temp 150°F to 160°F) and vegetables are tender.
Serving Suggestion: Carve steaks. Season beef and vegetables with salt and pepper. Serve with herbed orzo pasta. Refrigerate leftovers.
