Herbed Flounder w/ Cheese for 2
Source of Recipe: Cook Light, Eat Right - Pillsbury Microwave Serves: 2
1 pkg. (8 oz.) frozen flounder fillets 1/4 c. (1 oz.) cold shredded low-fat part-skim mozzarella cheese 1/4 tsp. Italian seasoning Paprika
Arrange half of the frozen fillets with thin ends toward center of an 8-in. square microwave-safe dish. Sprinkle 2 T. cold cheese down center of each fillets. Top with remaining fillets. Sprinkle with Italian seasoning and paprika. Cover with microwave-safe plastic wrap.
Microwave on HIGH for 5-7 minutes or until fish flakes easily with a fork; rotating dish 1/4 turn halfway through cooking. Let stand, covered, 2 minutes.
One serving equals: 120 calories...22 gm protein...0 fiber 1 gm carbohydrate...3 gm fat...70 mg cholesterol...140 mg sodium...
