Autumn Pork Chops (Serves 2)
2 pork loin chops 1/2 teaspoon vegetable oil 1/2 red apple, cored and sliced into 1/2-inch wedges 1/8 cup dry white wine (OR use half unsweetened apple juice/half water, but higher carbs), divided 1/4 cup chicken broth, divided 1 tablespoon cider vinegar 1 tablespoon cornstarch 1/2 tablespoon Worcestershire sauce salt and pepper to taste
Heat oil in a skillet. Add chops and brown on all sides. Add apple slices and sauté for three minutes, stirring occasionally. Add half of the wine and half of the chicken broth; reduce heat, cover and simmer for 10 minutes. Combine remaining wine and broth with remaining ingredients and add to skillet. Cook over medium heat, stirring constantly until sauce thickens.
Nutrition per serving: 196 calories, 6g fat, 21 g protein, 10 g carbohydrate, 1 g dietary fiber, 51 mg cholesterol, 175 mg sodium

Serving suggestions: Steamed broccoli and turnip fries (peel turnips, slice into "fries", toss with some olive oil and bake on a cookie sheet in a preheated 375 degree oven, turning once. Season with salt and pepper and garlic powder).
