Sesame Shrimp on Cauli-rice (Serves 2)
1/2 bunch broccoli, in florets 1/2 head cauliflower 1 teaspoon vegetable oil 2 1/2 cloves garlic, pressed 1/2 cup sliced mushrooms 2 tablespoons low sodium soy sauce 1 tablespoon sesame oil 1/2 teaspoon brown sugar 1 tablespoon sesame seeds 1/2 bunch green onions, finely chopped 2 tablespoons balsamic vinegar 1/2 pound frozen medium shrimp, thawed
Steam broccoli until tender-crisp; set aside. Process cauliflower in a food processor or blender until it resembles grains of rice; steam and set aside. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and mushrooms and sauté for 4 to 4 minutes. Add soy sauce, sesame oil, brown sugar, sesame seeds, green onions and vinegar. Simmer for 3 to 5 minutes. Add shrimp and cook for another 5 to 8 minutes. Toss shrimp and sauce with the cauli-rice and broccoli and serve.
