Beef and Creamed Spinach Serves 2
½ pound extra-lean ground beef ¼ cup onion, chopped salt and pepper to taste 1 (10 oz.) package frozen spinach, thawed and drained 1 tablespoon butter ¼ cup half and half Parmesan cheese, grated (optional)
Combine ground beef, chopped onion and salt and pepper; form in to two patties. In a skillet, brown beef patties over medium-high heat. Flip carefully so you don’t break them. In a saucepan, place spinach, half and half and butter. Cook over mediu-high heat for about 5 minutes, or until spinach and cream thicken. Spoon creamed spinach onto dinner plates and top each with a beef patty. Garnish with parmesan cheese, if desired.
Nutrition per serving: 438 calories; 30 g fat; 26 g protein; 8 g carbohydrate; 5 g dietary fiber; 119 mg cholesterol; 191 mg sodium.

Serving suggestions: Serve with faux-tay-toes (steam a head of cauliflower until tender; drain; add butter, cream cheese and salt and pepper; mash until you get a mashed potato-like texture) and steamed broccoli.
